Eat Veggies to Help Fight Cancer
Recent studies have linked diets high in beta-carotene to a lower risk of certain types of cancer, particularly cancers of the lung, breast, cervix, uterus, oesophagus, stomach, colon and mouth.
However, the study also found that taking beta-carotene supplements and skipping the veggies does not provide any cancer benefit. Experts believe that it is not the beta-carotene alone that confers the protection, but rather the beta-carotene is a marker for the presence of a wide range of protective cartenoids.
Experts recommend aiming to fill half your plate with vegetables. The vegetables with the most cancer fighting cartenoids are pumpkins, sweet potatoes, squash and the fruit cranberries.
