This 10 minute prawn pasta recipe is simply delicious. It’s bound to be a popular side dish at your next gourmet BBQ or can be served with green salad for a healthy meal after work.

Ingredients:

  • 500 grams packet fresh fettuccini
  • 500 grams fresh peeled green prawns
  • 1 tablespoon butter
  • 2 x tomatoes, peeled, seeded and chopped
  • 1 x clove chopped garlic
  • 1/2 red onion finely diced
  • 1 lemon
  • 200 g reduced fat feta

Method:

  1. Cook fresh pasta according to packet directions, drain and set aside.
  2. Fry the garlic, onion and prawns in a little butter till the prawns start to change colour.
  3. Add the chopped tomatoes and a squeeze of lemon juice.
  4. Stir until heated through.
  5. Place pasta in serving bowls, top with prawns and sprinkle the feta on top.
  6. Season with salt and pepper.

 
Tips:

  • Add chilli for prawn pasta with zing;
  • Delicious with a green salad which is also a great source of additional vitamins and minerals. They are important for maintaining a healthy body. Serving all meals with a side salad is an easy way to ensure you eat all the vegetables you need for a healthy balanced diet;
