This simple muffin recipe makes a perfect treat for school lunch boxes that your children will love. You’ll rest easy knowing your kids are eating a healthy snack.
Makes 12 muffins
- 1 1/2 cups plain flour
- 1/2 cup sugar
- 2 tsp baking powder
- A pinch of salt
- 1/2 cup skim milk
- 1/4 cup canola oil
- 1 cup chopped apple
- 1/4 cup raisins
- A pinch of cinnamon
- 1 egg
- In a bowl, combine the flour, sugar, baking powder, cinnamon and salt.
- Add the egg, milk and oil. Stir into dry ingredients until just moistened.
- Mix in the apple and raisins. Pour into non-stick muffin cups.
- Cook, cool and start eating!
